Small packages are approximately 1.75 pounds and large approximately 3 pounds each.  When braised into submission, beef short ribs become very tender and fortify their cooking liquid with thickening collagen.  Our short ribs are flanken style which means they are cross-cut across several bones.  One of our favorite recipes for short ribs:
