When braised into submission, beef short ribs become very tender and fortify their cooking liquid with thickening collagen. Our short ribs are flanken style which means they are cross-cut across several bones. Smalls are in packages of approximately 1.5 pounds, regulars are approximately 2.5 pounds, and large are approximately 3+ pounds. One of our favorite recipes for short ribs:
